livin’ the good life (on the cheap)
So for the past three months or so, I have been interning and haven’t really been cooking. I have been eating premade meals and eating fast food wayyy too much. But after a binge on Taco Bell, I decided enough is enough. I am going to stop putting this crap in my body and get back in the kitchen. For the past few months, I have been cringing at the grocery store and only getting the bare necessities because I didn’t want to spend money. The ironic thing is I had no problem getting take out three or more nights a week.
Today, I put the horrible cycle to an end. I woke up, went to the Grant Park Farmers Market and got fresh green beans, zucchini, bell pepper and poblanos. Then, I went over to Trader Joe’s and got the rest of my groceries. I only spent about $40, and have enough to make delicious meals for the next week, and maybe more.
Tonight, I made goat cheese stuffed pork chops with a balsamic and pear glaze with green beans. So amazing. I made enough for dinner and lunch tomorrow, so I’m sure my coworkers will be jealous. Best part: the meal was well under $5 per serving and so much better than a McDouble. So my advice to everyone, stop being lazy and start living the good life with gourmet meals at home. It only takes about 30 mins to make a delicious dish. In Atlanta traffic, it takes that long to just to get a fast food hamburger and come back. Treat yourself right. Go buy groceries and cook at home.
